Lefsa Photos

Lefsa

And now for my lefsa blog! To start making lefsa you need to start the night before and peal, boil, and mash your potatoes. They need to chill over night. After they have chilled then you need to rice the potatoes and mix in your flour. The best way to mix the flour and potatoes is yo use your hands. Next your a 1/3 measuring cup to form balls. After all of the balls are formed place them in the refrigerator to chill. After letting the balls chill for awhile you are ready to make lefsa. When you make lefsa you have to have special rolling pin, spatula, and rolling board. When you are ready to roll out the balls you need to add four to the rolling pin and rolling board. Then roll out the ball until nice and thin. Next take the spatula and carefully roll the dough around it. Then unroll the dough onto the skillet. Check the bottom of the lefsa for brown spots. Then use the spatula to flip over the lefsa. Set under a towel to cool. Recipe and picture to come.
