Potato Kulb

Next we made potato kulb. This is like a dumpling with a ham surprise in the middle. First you have to boil a ham hock to cook your ham and make a broth to boil the potato kulb in. You have to peal about 5 good sized potatoes then you need to grate the potatoes. We found that it was easier to blend then with a little water. Only blend them for a couple seconds. You don't want them mushy just cut up very finely. Then you add in flower use your hands to mix it all together. Now you make them all into a ball. Grab a little bit of the potato mixture and make a little dent and place in your ham. Grab more potatoes to cover the ham and mold it into a ball. Don't do this until you have your broth boiling. Then place the balls into the pot. Be careful to not burn your hands. Let the balls boil for 25-30 minutes. Be sure not let them stick to the bottom. Recipe will come later.



Krumkaka

My Norwegian dessert is krumkaka. This is one of the three things that we made on Friday. You have to mix the batter and then let it chill. While the batter chilled we made potato klub and lefsa. We used a modern version of the krumkaka press. (Im not sure if it is really called a press.) You leave the batter in there for a while. Some people make their krumkaka light and some like it a little darker. Once you take it out you need to roll the krumkak on a pin right away. They stay rolled better when you do it right when it is hot. Krumkaka freezes very will so you can make it early and freeze it for the holidays. I don't have the recipe right not so I will update that later.

On to the Next Country

I met with my mentor today at 4 o'clock. We talked about what my project is all about and what is the next step I need to talk. We decided that we are going to get together on Friday at 10 o'clock. We are going to make Potato Klub, Lefsa, and Krumkaka. We are going to cook at Judy's house. I think this is going to be very exciting.

I have a meeting with my community mentor Judy today after school. Im looking forward to talking with her and showing her what I have gotten done so far. I am also excited to see what she has to say about all my other recipes and how she can help me.

Cookin' Again

Tonight Im making my American meal for my family. My grandparents will be joining us for supper. My mom has been my recorder today. She has recorded me as I prepare and cook the food giving the directions on how to make them. Along the say she has been taking photos for my photo journal I need to have at the end of the year. So far it has been pretty interesting filming. We have had to start over a couple of time either mom and I would get the giggles, the phone would ring or my dad and brother would come in with a scary Halloween mask on. I will have some editing to do.

Garbage Platter



I don't think that I can make an American meal with out deep fat frying some food. My appetizer for this meal is a garbage platter. I filled the plate with french fries, cheese balls, mushrooms, popcorn chicken and, onion rings. It was a very tasty!

Lettuce Salad





Last night my family had lasagna and I thought that it would be a good idea to practice making salad for my project. It wasn't too hard to make it was just lettuce, cubed ham, shredded cheese, hard boiled eggs, carrots, and bacon bits. It was "build your own salad" so they got to choose what and how much they wanted on their salad.

Supper is Ready

Fried Chicken







Prep Time: 10 minutes
Cook Time: 45 minutes
Ingredients
1/2 cup all-
purpose flour
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
3-3 1/2 pound broiler-fryer chicken, cut up
vegetable oil

Directions
Mix flour, paprika, salt and, pepper. Coat chicken with flour mixture. Heat oil in 12-inch skillet over medium-high heat. Cook chicken oil about 10 minutes or until light brown on both sides; reduce heat. Cover tightly and simmer for about 35 minutes, turning once or twice, until juices run clear. If skillet can not be covered tightly, add 1/2 tablespoons water. Remove cover during the last 5 minutes of cooking to crisp chicken.

Potato Tip

When I made potatoes I used ones from our garden and they were really small. I found it helpful to use a fork to help peal. This way you don't drop the small potato a ton of time and you wont cut your self. I didn't think of this idea until I had one potato felt to peal.

Make Ahead Mashed Potatoes






These are my FAVORITE!
Prep Time: 20 minutes
Cook Time: 30 minutes

Ingredients
2 pounds potatoes
1/2 cups mayonnaise
8 oz. cream cheese
1/2 teaspoon salt
1/4 teaspoon white pepper
1/2 teaspoon onion powder
paprika

Directions
In a saucepan, combine potatoes and enough water to cover. Bring to a boil. Reduce heat a boil for 20 minutes or until potatoes are tender. Drain. Mash potatoes until fluffy, gradually adding mayonnaise, cream cheese, salt, pepper, and onion powder. Spoon into casserole dish and sprinkle with paprika. Bake at 350 degrees for 30 minutes or until thoroughly heated.

Green Bean Casserole




My Aunt Shar's Green Bean Casserole-
Prep Time: 5 minutes
Cook Time: 45 minutes

Ingredients
2 cans french cut beans
1 can mushroom soup
1/2 can of french fried onions
milk if needed

Directions
Drain beans. Put into casserole pan and mix with mushroom soup and french fried onions. Bake at 350 degrees for 30-45 minutes. Sprinkle rest of french fried onions on top the last 10 minutes of baking.

Recipe Book

I have started my recipe book! Yesterday I went to Wal-Mart to pick up a binder. I am doing to have that be my book because I can type all my recipes and slide them into a sleeve and then clip them into my book. I think this is good because I can change the recipe if I need too. I am going to have spot after the recipes to add a picture so you know what the food should look like when you make it. I feel like I would make food that has a picture and not make food without a picture.

I also just got a recipe book from my grandma to help me finish my Norwegian recipes. After I finish those recipes I can go shopping and then start cooking!

So Close

Well I almost have all of my recipes found for my project. All I have left is to look for my American recipes and then check with my family to find two or three Norwegian recipes. I am so excited that I almost have this all done. Next I am going to make a grocery list. I can't wait to have that done!

Recipes, Recipes, Recipes

Today I looked up new food ideas and recipes! First I looked up different food and made a list for each country. There are a few countries that I'm looking for yet. I found that appetizers are really hard to find. After that I looked up the recipe on allrecipes.com. I love this website. It has a special section for international food and that has been really helpful. Mrs. Miller showed me this website and said that it was one of her favorites. I have all my recipes for Germany and France. I'm going to wait on the other ones and ask to see my old family recipes. I think those would be better to use because they come straight from my family. Recipes that are passed down from generation to generation are the best and mean more to me. I also spent time making pages for my recipe book. I think that I am going to make my own book and not buy one but I'm not positive yet. I'm so excited! I just want to keep working on all my stuff but I really need to take a break.
