Ingredients
1/2 cup all-
purpose flour
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
3-3 1/2 pound broiler-fryer chicken, cut up
vegetable oil
Directions
Mix flour, paprika, salt and, pepper. Coat chicken with flour mixture. Heat oil in 12-inch skillet over medium-high heat. Cook chicken oil about 10 minutes or until light brown on both sides; reduce heat. Cover tightly and simmer for about 35 minutes, turning once or twice, until juices run clear. If skillet can not be covered tightly, add 1/2 tablespoons water. Remove cover during the last 5 minutes of cooking to crisp chicken.
